Leftover Turkey Chilli
A smoky, gently spiced chilli that uses leftover cooked turkey instead of mince and comes together in half an hour.

Ingredients
- 2 cup cooked turkey
- 400 g kidney beans
- 400 g chopped tomatoes
- 1 piece onion
- 1 piece bell pepper
- 2 clove garlic
- 1 tsp ground cumin
- 1 tsp chilli powder
- 1 tsp smoked paprika
- 1 tbsp olive oil
- 4 tbsp sour cream
- 2 tbsp coriander
Instructions

Heat the oil in a large pan and cook the onion and pepper for 6 minutes.

Add the garlic, cumin, chilli powder and smoked paprika and cook for 1 minute until fragrant.

Stir in the chopped tomatoes and beans, then simmer for 12 minutes until thickened.

Add the shredded cooked turkey and warm through for 5 minutes so it stays juicy.

Season, then serve with sour cream, grated cheese and coriander.

Store it
Cool within two hours, then keep in an airtight container in the fridge and eat within 3–4 days.

Reheat until piping hot all the way through. A skillet or air fryer keeps texture better than a microwave.
