Leftover Turkey Noodle Soup
A brothy soup that turns leftover cooked turkey and a few fridge vegetables into dinner in about 25 minutes.

Ingredients
- 2 cup cooked turkey
- 1.5 cup egg noodles
- 6 cup chicken or turkey stock
- 2 piece carrot
- 2 stalk celery
- 1 piece onion
- 1 tbsp olive oil
- 1 piece bay leaf
- 2 tbsp parsley
Instructions

Heat the oil in a large pot over medium heat and cook the onion, carrot and celery for 6 minutes until softened.

Pour in the stock, add the bay leaf and bring to a simmer.

Add the noodles and cook until just tender, about 8 minutes.

Stir in the shredded cooked turkey and simmer 3 minutes more, just long enough to heat it through so it stays tender.

Season with salt and pepper, remove the bay leaf and finish with chopped parsley.

Store it
Cool within two hours, then keep in an airtight container in the fridge and eat within 3–4 days.
