Skillet Leftover Turkey Pot Pie
All the comfort of turkey pot pie with none of the pastry work: one skillet, leftover cooked turkey and a sheet of puff pastry on top.

Ingredients
- 2.5 cup cooked turkey
- 1 sheet puff pastry
- 3 tbsp butter
- 3 tbsp plain flour
- 1.5 cup chicken or turkey stock
- 0.5 cup milk
- 1 cup frozen peas
- 2 piece carrot
- 1 piece onion
Instructions

Heat the oven to 200C / 400F.

Melt the butter in an ovenproof skillet over medium heat and cook the onion and carrot for 5 minutes.

Stir in the flour and cook for 1 minute, then whisk in the stock and milk a little at a time until the sauce thickens.

Fold in the cooked turkey and peas, season well and take the pan off the heat.

Lay the puff pastry over the skillet, trim the edges and cut two small slits in the top.

Bake for 22 to 25 minutes until the pastry is puffed and deep golden. Rest 5 minutes before serving.

Cool within two hours, then keep in an airtight container in the fridge and eat within 3–4 days.
