Hungarian Goulash Soup

A hearty paprika soup using leftover beef or pork and root vegetables.

Ingredients

  • 2 cups diced leftover beef or pork
  • 2 potatoes
  • 1 onion
  • 2 tbsp paprika
  • 1 tsp caraway
  • 4 cups broth
  • 1 bell pepper
  • sour cream for serving

Instructions

    Sauté onion until soft, add paprika and caraway.

    Add meat, potatoes, pepper, and broth.

    Simmer 30 minutes until vegetables are tender.

    Serve with a dollop of sour cream.
