Leftover Turkey and Cranberry Melt
The best leftover turkey sandwich: sliced turkey, cranberry sauce and melting cheese pressed between buttered bread until golden.

Ingredients
- 1.5 cup cooked turkey
- 4 slice sourdough bread
- 3 tbsp cranberry sauce
- 100 g brie or cheddar
- 2 tbsp butter
- 1 tsp dijon mustard
- 1 handful rocket
Instructions

Butter the outsides of the bread slices.

Spread cranberry sauce on the inside of two slices and add the sliced cooked turkey.

Add the cheese, a few rocket leaves and a little mustard, then close the sandwiches.

Cook in a dry pan over medium-low heat for 4 minutes a side, pressing with a spatula, until the bread is crisp and the cheese has melted.

Cut in half and eat straight away.

Cool within two hours, then keep in an airtight container in the fridge and eat within 3–4 days.
