Ingredients

  • 2 cups cooked rice
  • 1 cup leftover tomato stew or sauce
  • 1 tsp thyme
  • 1 tsp curry powder
  • 1 onion
  • 2 tbsp oil
  • fried plantain for serving

Instructions

    Sauté onion in oil with thyme and curry powder.

    Add tomato stew and simmer 5 minutes.

    Stir in cooked rice until evenly colored.

    Heat through and serve with plantain.
